Thomas Pico has been turning out elegant, considered Chablis since obtaining his first plot near Courgis in 2005. Under the tutelage of Chablis superstars Alice and Olivier de Moor, Thomas has established himself as as a devoted organic grower committed to sustainable practices both in the vineyard and in the cellar.
This 2016 'Butteaux' is brimming with briny minerality and citrus pith. The aging process is long and slow: 12 months each in used oak, concrete tank and bottle. Layered, precise and pure Premier cru Chablis at its best.
