Michel Theron started his domaine 1993 buying the 0.4h of ungrafted (rare) vines that is the namesake. Since then they’ve bought new plots in harder to farmer ares and re-wilded parts of forest that were cleared in past decades. Gaining Demeter certification in 2008 their wines have a lightness of touch. Never overbearing but distinctively aromatic. Their use of low sulphur would put them into the Minimal Intervention category on a wine list, but their style is still of place and as such are worth decanting, drinking at cellar temperature and really engaging with. Not part of the new wave, instead being the bedrock of it.
